Altough the process will be faster the shallower the water is. For fishing, you need to use the crane, which can be operated in three ways, depending on your preference and crew size:

The control station on the deck in front of the forecastle
Direclty on the helm
Remote control (allow remote controll by activating a key on the port side of the bridge/Radio Operator's Seat), same controls as on the Helm, but you need to tap the keys instead of holding them, because of how remotes work
Position the crane over your chosen pod and lower it slightly with the "Crane Connectors" active. Release the pod using the appropriate key or control station button. Once the buoy connects to the crane, move it over either side of the deck and release. The pod will sink while the buoy surfaces, activating its transponder and light. Repeat this process for all remaining pods. After some time, drive near one of the buoys, enable "Crane Connectors" and bring the crane down near to the water level. As soon as the buoy attaches to the crane, the pod will be raised automatically. As soon as it is out of the water, you can bring the pod over the hoppers and use the release catch key on the pod. Now bring the pod to its storage position, reenable the deck connectors and disable the "Crane Connectors". The pod should reattach and be stored safely. Repeat for the other pods. To unload the crabs, drive near a fish market. There is a remote control station on top of the forecastle that can be used to remote control the fish gantry on the dock (the remote control frequency is shown on the gantry). Lower the gantry and let it suck the crabs out of the hoppers. Profit! You can also do buoy transport missions with it apparently.
